If you are in need of a quick meal, nothing works better than a nice warm bowl of soup. We’d like to share with you this easy cheeseburger soup recipe that the whole family will enjoy. After all, who doesn’t like cheeseburgers?
I have to admit, I love soups! You can have them for lunches and they’re perfect fort suppertime too. Nothing is more comforting on a cool, damp day or soothing when you’re feeling sick. Add this recipe to your recipe book and enjoy it often.
- 1 pound ground beef
- ¾ cup chopped onion
- ¾ cup shredded carrots
- 1 teaspoon dried basil
- 1 teaspoon dried parsley flakes
- 1 clove garlic minced
- 3 tablespoons butter
- ¼ cup all-purpose flour
- 3 cups beef broth
- 1 T Worcestershire Sauce
- 4 cups peeled and diced potatoes
- 1 ½ C shredded cheese I use a blend
- 2 slices American cheese adds a bit of creaminess
- 1½ cups milk
- ¾ teaspoon salt
- ¼ to ½ teaspoon pepper
- ¼ cup sour cream
- Brown the ground beef in a 3-quart saucepan. Drain off fat.
- Add onion, shredded carrots, parsley flakes, basil, and garlic. Saute until tender.
- Add butter. After melted, sprinkle flour over meat and mix thoroughly. Stir for a minute or two.
- Slowly add the broth and stir until smooth. Add potatoes, Worcestershire sauce, and milk and bring to a boil. Reduce heat, cover and simmer 10-12 minutes or until potatoes are tender.
- Stir in the cheese, salt, and pepper. Cook and stir until cheese melts. Remove from heat and blend in sour cream.
Can be served garnished with chopped pickles, chopped crispy bacon, shredded cheese, croutons or anything you like on your burger. 🙂
- Note: If thickens too much, add more broth to get the right consistency.
Serve your cheeseburger soup with some fresh homemade bread or biscuits and the family is sure to love it. And if there happens to be any leftovers (highly unlikely!), it only gets better when it’s reheated. It also freezes nice so you can enjoy it later.
