Focaccia Bread Recipe
Our skillet bread recipe is actually considered a “focaccia” bread. Focaccia is an Italian flatbread that is typically topped with olive oil and a wide variety of seasonings. The finished bread has more of a pizza crust consistency. It’s delicious served as a side dish or enjoyed alone.
Recipe Card
- 1 Cup warm water
- 2 Tablespoon white sugar
- 2 Teaspoons active dry yeast or 1 package
- 3/4 Teaspoon salt use a coarse salt
- 1/3 Cup olive oil
- 2-1/4 Cups flour, additional may be needed to get correct consistency
- 1 Tablespoon olive oil use to coat skillet
- 1 Tablespoon olive oil for top of bread
- 2 Cloves garlic thinly sliced
- 2 Tablespoons fresh rosemary chopped (or 1 teaspoon dried)
- 1/2 Teaspoon salt use a coarse salt
- In a stand mixer (or large bowl), add warm water and yeast. Stir together and let sit for 5 minutes.
Add sugar, salt, 1/3 cup olive oil, and 2 1/4 cups flour. Mix together with dough hook until a soft dough forms. Knead for 8-10 minutes. (if you're kneading by hand, turn onto a well-floured work surface and knead for 8-10 minutes) Add more flour as needed until dough pulls away from the sides of the bowl or still slightly sticky.
With dough wrapped on dough hook, spray bowl with butter or olive oil spray. Remove dough from hook, form into a ball, place in bowl and turn to coat the top with oil. Cover with plastic wrap and let rise for 45 minutes. (Hang onto the plastic wrap for the second rise.)
Coat a 10-inch cast-iron skillet (I've also used a round casserole dish) with 1 tablespoon olive oil. Punch down the dough and press it into the bottom of the pan. Poke multiple holes in the uncooked dough with your fingers tips. Another option is to use a sharp knife to score the top of the bread dough in a crisscross pattern.
- Brush the top with 1 tablespoon olive oil. Then sprinkle with garlic, rosemary, and 1/2 teaspoon salt.
Cover the pan loosely with plastic wrap and let the dough rise another 20 minutes.
When the bread has risen, bake, in a pre-heated oven, at 400° for 20-25 minutes.
Remove from the oven when the top is light golden brown.
Remove the bread from the skillet immediately and let cool on a rack.
Drizzle with more olive oil and cut into wedges. It’s best when served while warm!
I highly recommend using a KitchenAid stand mixer for this recipe. The stand mixer makes preparing bread and cookie dough a snap. Read our article on the KitchenAid stand mixer. Learn how to make your life easier when preparing your favorite recipes at home.
